I saw a comment on Not Martha's blog about having the dough rise in a bowl coated in olive oil rather than flouring the heck out of a towel so I tried it.
I've made the bread 3 times this way and I think it works just great. I kind of like the flour method better but I couldn't tell you why. The outside is just as crusty and the inside just as moist with either method.
So if you are feeling a little lazy or want to try something new, just coat a large bowl with olive oil (wipe with a rag or paper towel to remove excess) and the cover the bowl with a towel. Be sure to coat the bowl up to the edges so it slides easily into your pot for baking.
